Fire & Ice Dessert Experience – Peller Estates Winery

Conclude your retreat with a truly unforgettable culinary moment: the Fire & Ice Dessert Experience at Peller Estates Winery. This dramatic and indulgent finale takes place in the winery’s 10Below Icewine Lounge, a stunning igloo-like space crafted entirely from 30,000 lbs of crystal-clear ice and maintained at a brisk -10°C—the exact temperature at which Icewine grapes are harvested.

Guests don Peller parkas and gloves before entering this frosty wonderland, where they’re greeted with a glass of award-winning Icewine and a three-tiered silver platter of handcrafted desserts. Each sweet creation is designed to complement the rich, concentrated flavours of Icewine, featuring delights such as jasmine-tea infused scones, macarons, chocolate cake, and oat-crumble berry tarts.

Guest also have the opportunity to roast Pellar’s homemade ice wine marshmallows over an open fire. These unique marshmallows, infused with ice wine, are described as having a delicious, burnished, caramelized exterior after roasting. The experience combines the unique flavor of ice wine with the classic treat of roasting marshmallows, creating a memorable sweet and smoky taste amid a roaring fire and great conversation with friends. 

Curated by Executive Chef Jason Parsons, this experience is a celebration of contrast—warmth and chill, sweetness and intensity, elegance and playfulness. It’s a sensory journey that engages sight, taste, and touch, offering a magical and memorable way to close your day in Niagara wine country.
